Everything is moving fast. The fruits and vegetables are growing quickly and so are the movements of all the dwellers in the garden, including insects. Remember - all garden dwellers are all important links in the chain of events that happens in our nature, and we mustn't harm any one of them in order to not ruin the entire chain. This is so even if it seems at times that they are "harming" our crops. These pests of course go especially to those crops that are having a difficult time, so take that into account when ordering winter leaves that struggle through the summer.

I'm guessing that once, before the era of computers, buildings, and modern transportation, when almost everyone worked outside and food was mostly fresh or perhaps a little self-preserved, weather was a daily topic of conversation. Today, many of us spend much of the day in air-conditioning. Even some crops nowadays grow in temperature-controlled environments, and conservation and transportation options are overwhelming.

The winter season is blessed with a variety of green leaves from many different families, types and species. Some of you are happy with the abundance of green leaves and some are put off by all these leaves. On the one hand, they differ within the family, by taste and textures but on the other hand you can usually use them all and switch between them in recipes and get something a little different and interesting every time you cook.

Dear Friends
The last months have been very confusing in terms of weather both for the plants and for me. It started to rain, stopped, it was cold, it was hot. I turned off the irrigation with great joy, turned it back on, turned it off with great hopes and disappointedly turned it on again .... I write to you now during a wintery rainy weekend. The drops are playing on the rooftop and from my window I see plants that are upright, in all shades of green, happy and smiling and strengthening from moment to moment.

"What winter, and what shoes!" as said in Hebrew to indicate it isn't a real winter...yet I hope...
That's it! The whole garden, except for one patch, is planted for winter.
The huge pumpkin plants that climbed up fences, terraces and trees, did not develop flowers anymore. The eggplants also transitioned into a sort of "freezing" of their growth. The tomatoes ceased to redden outside and from now on will be supplied by organic growers that have greenhouses. Even the basil that at the start of the season we long for, and later we got a little fed up with, grows very very slowly.

This week our box was one big "shehechianu" - " שהחיינו" ! Despite the heavy heat this last weekend, according to the great proliferation of greens in our boxes, autumn is finally here and every week we will have new products in our boxes.
In general
1. All of the greens you receive can and should be eaten fresh and raw. Some may be tough, rough, bitter or too spicy for your taste, so they can ALL be cooked - sautéed, steamed, added to soups, casseroles, be filled or as the filler.
