Pumpkin pancakes
Ingredients:
2 cups boiled and mashed pumpkin (drain well after boiling and immediately mash)
Approximately 3/4 cup flour
1/4 cup milk
1 egg
1 teaspoon cinnamon
2 tablespoons sugar
Pinch of salt
½ teaspoon vanilla
Pinch of baking powder
Crisco for frying (a must!)
Mix everything in blender or in a bowl, add raisins as needed, fry spoonfulls on griddle with Crisco. Makes about 30 small fritters
