Pickled mustard greens:
Ingredients:
3 tablespoons salt
3 tablespoons sugar
2 tablespoons vinegar
1 kg of mustard and arugula leaves

Preparation:
Boil a cup of water and add salt until dissolved, add sugar and vinegar.
Pour this marinade into a bowl or container with a lid, put the leaves in the mixture and add cold water to cover the leaves. Cover the bowl to keep out light and store at room temperature for three days. Take the leaves out of the marinade, drain and store them in a sealed glass jar in the refrigerator up to two months.

Mustard salad - from " the flavor of life - all about spices" Nissim Krispel: Ingredients: Young mustard stems 1 green onion chopped Olive oil, salt 1 cup sour cream Preparation: Gather the young mustard stems and peel with a knife. Place the bunch on the cutting board and chop to 2 cm strips. Add the chopped green onion, some olive oil and salt. On top of it all pour the sour cream, mix well, serve cold.

Warm greens salad with pecans
Ingredients:
6 cups of "greens" (leaves of mustard, turnip, broccoli, Collards, etc.)
2 tablespoons balsamic vinegar
2 teaspoons honey
1 tablespoon Dijon mustard
2 teaspoons oil
½ cup broken pecans

Preparation:
Rinse the leaves thoroughly and dry well. Remove the large stems, tear the leaves into a convenient size for a salad and place in large bowl.
In a small bowl mix vinegar, honey and mustard. Set aside.
