Sauerkraut (Kim chi)

Ingredients:
an average size cabbage
2 tablespoons of salt, also coarse
Optional: bay leaves, carrots
Process:
Slice cabbage into thin uniform strips. Place in large bowl with the salt. Allow it to "sweat" for 30 minutes.
Knead the cabbage (don't be shy, treat it exactly as if it were dough) in order to soften it and extract the liquids. Tightly pack the cabbage (you can do layers with bay leaves and carrots too) inside a sterilized jar. Make sure all the cabbage is covered by the cabbage water. Add water if needed.
Leave in a shaded place.
Over the next days open the jar a few times to allow the gases to exit. Tightly pack down again if needed.
It will be ready after two or three weeks. Munchable a lot earlier.
