Spinach with Balkan-style rice / Beni Saida
Ingredients (5 servings)
1/3 cup olive oil
2 onions, finely chopped
4 cloves of garlic, sliced
500 g fresh cleaned spinach leaves, coarsely chopped
1 cup rice
Salt and freshly ground black pepper
1.5 cup chicken broth or water
1/2 lemon juice
Serve
1/3 cup olive oil
6 cloves garlic, minced
Preparation
Heat the oil in a heavy saucepan and fry the onion and sliced garlic until golden. Add the spinach and cook, stirring, until most liquid evaporates.
Add the rice, salt and pepper and saute about 4 minutes. Add the broth or water, cover and simmer for about 20 minutes.
Turn off the heat and leave the pot closed. Set aside for 20 minutes, add lemon juice and stir. Taste and adjust the seasoning.
Before serving, heat the oil and fry the crushed garlic for 20 seconds. Remove from flame, pour over the rice and serve.
